Chilled Pista Barfi
Method:
1. Soak pistachios in lukewarm water for half an hour. Drain the water and keep it aside.
2. Add enough water to dissolve the sugar, make a string syrup. Add pistachio paste to the syrup and let the mixture simmer for 5-6 minutes on low heat. Stir constantly.
3. When the mixture thickens, add cardamom powder and food color and keep stirring it for 1 minute.
4 Turn off the gas and spread it in a greased plate, press it and let it settle. After 1 hour, make a square chosla, once it comes to room temperature, store it in an airtight container or serve it.
